There is no way to change Civ VI to move the (proper) My Games folder somewhere else. If you want to change where My Games is located, then you can do that - but it is a function of making a change to Windows, not a change you would make in Civ VI.

Windows defines where that folder is located, which by default is in My Documents. Civ VI stores files in the My Games folder, wherever it is. Note that Civ VI does not create the My Games folder in the My Documents folder. You need to fix the actual problem (OneDrive syncing the My Games folder), not the symptom (OneDrive syncing Civ Vi files). Personal files will no longer sync after this said date, and Microsoft adds that users will have to upload or access them directly on OneDrive for web from the laptops, PCs running the older version of Windows. If you were able to change Civ VI to store its files in another location, then you'd just have this same problem some time in the future with another game. Further, OneDrive desktop applications running on these operating systems will stop syncing to the cloud from March 1, 2022. Most games that need to save user files use the My Games folder. When the game starts try to find the folder "My Documents" and automatically creates or use the folder "My Games".This is not the right way to look at the problem, or the right way to solve it. Onedrive the only a thing that can do is to sync or not what you want.

I was asking Microsoft's Onedrive and they told me that I can choose which folder I would like to sync or not and I can move the folder outside of Onedrive to prevent the sync.
This is NOT a game problem, but as others have mentioned, a OneDrive issue. Basically you need to look into whether OneDrive can be configured to do what you want.
